Applications
What it does for you
Our main market for watermelon seed has been India, and India buys the seed to hull it: the pale kernel inside — magaz, or tarbooj magaz — is a staple of Indian kitchens. Ground to a paste it gives body and richness to korma-style gravies; whole, it goes into mithai, halwa and festive sweets, thandai blends and seed mixes; lightly roasted, it is a snack in its own right. Beyond India the whole seed is roasted and salted for the snacking trade across the Middle East and North Africa, and the kernel is a rising plant-protein ingredient for bakery and snack bars. Jumbo is the roasting seed; Sadir, smaller and denser, is the hulling seed.
